One of my favorite lunchtime recipes is couscous with walnuts, feta, and sliced red grapes. When I didn't have feta or grapes on hand yesterday, I improvised and came up with something just as yummy!

Coucous with Walnuts and Dried Cranberries
1. Add 1/2 cup hot water to 1/2 cup couscous. Put a lid on it and let sit for 10 minutes. Fluff with a fork.
2. Add a squirt of lemon juice, a drizzle of olive oil, and salt and pepper. Add a handful of craisins and a handful of chopped walnuts.
This would still be even more delicious with feta cheese, but it was tasty without too. :)
